Dôme aux Marrons (Chestnut Dome)
this lovely little cake is created by layering hazelnut dacquoise, filled in between with chestnut mousse, then completely covering the cake with the mousse and smoothing it in a dome shape.  the final dome is covered with a chestnut cream of butter and chestnut paste using a little spatula to give it this hedgehog appearance, which if you have never seen a chestnut in the wild this decorating effect actually resembles the spiky covering that encloses the chestnuts while on the tree.  a spray of chocolate on the outside gives it a velvety looking texture.
