Tarte Créole: i know what you are thinking this is not some spicy louisiana bayou dessert (which is the image i had in my head the first time i saw the name of the recipe), but it is more like a piña colada pie: a sweet pastry crust filled coconut mousse and a Savoie sponge cake soaked in Malibu rum, topped off with italian meringue brûléed and some fresh pineapple.
