Bûche is a French cake that it typically found around the Christmas holidays, known to english speaking peoples as a Yule Log.
This is a Mango and Raspberry Yule Log with a mango mousseline cream, dacquoise, a raspberry crémeux filling and the outside is covered in a sort of crumble.
